Ingredients
• 1 medium head of cauliflower, chopped (about 4 cups)
• 2 tbsp unsalted butter (or olive oil for a vegan option)
• 1 small onion, finely diced
• 2 garlic cloves, minced
• 4 cups chicken or vegetable broth
• 1 cup heavy cream (swap for coconut milk for dairy-free)
• 1/2 tsp sea salt
• 1/4 tsp black pepper
• 1/4 tsp smoked paprika (optional, for depth)
• 1/2 tsp dried thyme
• 1/2 cup shredded cheddar (optional, for extra creaminess)
• Crispy bacon, fresh parsley, or roasted nuts for topping (optional)
Directions
• Sauté the Base
Melt the butter in a large pot over medium heat. Add the onion and cook for about 3-4 minutes, stirring occasionally until softened. Toss in the garlic and let it cook for 30 seconds, releasing its aroma.
• Simmer the Cauliflower
