Dijon-Herb Crusted Pork Steak with Caramelized Brussels Sprouts
Ingredients (1 Serving):
• Pork steak: ~7 oz
• Brussels sprouts: ~5 oz
• Olive oil: 2 Tbsp (divided)
• Dijon mustard: 1 tsp
• Garlic: 1 clove, minced
• Fresh/dried thyme, lemon zest, honey: to taste
• Salt, freshly ground black pepper, and a pinch of red pepper flakes (optional).
Instructions:
• Marinate the Steak: Rub pork with mustard, thyme, lemon zest, honey, salt, and pepper. Let sit for 20 minutes.
• Prep Brussels Sprouts: Halve and season with salt and red pepper flakes.
• Sear the Pork: Heat 1 Tbsp oil in a skillet. Sear steak for 3–4 minutes per side. Add garlic in the last minute. Rest for 5 minutes.
• Cook Brussels Sprouts: In the same skillet, add 1 Tbsp oil. Sauté sprouts cut-side down for 5–7 minutes until golden.
• Serve: Plate the pork steak after slicing and pair it with the caramelized Brussels sprouts. Drizzle with pan juices if desired.
