Buckwheat with Mushrooms and Chicken (One-Pot Recipe)


Ingredients (4 servings):

• Buckwheat — 1 cup (7 oz)

• Chicken breast — 10.5 oz

• Mushrooms (button or wild) — 7 oz

• Onion — 1 medium (3 oz)

• Carrot — 1 medium (3 oz)

• Garlic — 2 cloves

• Water or broth — 2 cups

• Vegetable oil — 1 tbsp

• Salt and pepper — to taste

• Fresh herbs (parsley or dill) — 0.7 oz

Instructions:

• Prep the ingredients:
Cut the chicken breast into medium-sized pieces. Slice the mushrooms, dice the onion, julienne the carrot, and finely chop the garlic.

• Sauté the chicken:
Heat the oil in a deep skillet or heavy-bottomed pot. Sear the chicken until golden (3–5 minutes). Add the onion, carrot, and garlic, and cook for another 2 minutes.

• Cook the mushrooms:
Add the mushrooms to the skillet and sauté for about 5 minutes until their liquid evaporates.

• Add buckwheat:
Rinse the buckwheat and add it to the skillet. Mix all ingredients thoroughly.

• Simmer:
Pour in the water or broth, season with salt and pepper, and stir. Cover with a lid and simmer on low heat for about 20 minutes until the buckwheat absorbs all the liquid.

• Finish:
Remove from heat and let it rest, covered, for 5 minutes. Sprinkle with chopped fresh herbs before serving.
