• Vanilla extract (optional) – 1/2 teaspoon
Instructions
• Prepare the base:
In a bowl, mix the chia seeds, coconut milk, and (optional) vanilla extract. Stir well to prevent any lumps.
• Let it set:
Transfer the mixture into glasses or small jars. Cover with a lid or plastic wrap. Place in the refrigerator for 4–6 hours (or overnight). Stir once after about 10 minutes to redistribute the seeds.
• Serve:
Before serving, top the pudding with berries. If desired, drizzle honey or agave syrup on top.
