Banana Oatmeal Pancakes (1 Serving)
Ingredients
• 1 medium ripe banana (about 4.2 oz / 120 g)
• 1 large egg (about 1.8 oz / 50 g)
• ½ cup old-fashioned rolled oats, ground into flour (about 1.8 oz / 50 g)
• ½ teaspoon ground cinnamon
Instructions
• Prep the banana
Peel the banana and place it in a deep mixing bowl.
• Make oat flour
Put the rolled oats in a blender (or food processor) and blend until you get a fine, flour-like consistency.
• Prepare the batter
Add the egg, the freshly ground oat flour, and cinnamon to the bowl with the banana. Blend or whisk everything together until the batter is smooth and consistent.
• Heat the skillet
Warm a nonstick skillet over medium heat. If needed, lightly coat it with a minimal amount of oil (coconut or olive oil) or cooking spray.
• Cook the pancakes
Spoon the batter onto the skillet to form small pancakes, about 3–4 inches in diameter. Cook each side for 2–3 minutes, or until golden brown.
• Serve
